Since opening in 1975, Tokagen at Kumamoto Hotel Castle has been serving authentic Sichuan cuisine to Japan.
The flavors and techniques passed down by the beloved disciples of Chen Jianmin, the master of Sichuan cuisine, are still passed down today.

We serve traditional flavors and cooking techniques that have been handed down for 50 years since our opening, using authentic cooking utensils.
Chinese cuisine is one of the hotel's signature dishes, and as a chef who has inherited that technique,
Our role is to deliver cuisine that meets the diverse needs of customers not only from within and outside Kumamoto Prefecture, but also from overseas.
Depending on experience and skills, you will be in charge of different sections, such as preparation, seasoning, appetizers, stir-fries, and desserts.
This is an environment where you can deepen your knowledge not only of Chinese culinary techniques, but also of its history and culture.
Cooking in the hotel
・Preparation work (preparing ingredients, preparing food)
・Cooking and plating (for restaurants, banquets, and room service)
・Making decorative crafts
・Menu development and recipe creation
Management and operation related tasks
・Food management, purchasing, cost calculation

Since opening on October 16th, 1960 as Kumamoto's guesthouse to accommodate state guests, it has continued to exist alongside the city as a representative face of Kumamoto, alongside the famous Kumamoto Castle.

Plan-Do-See was founded in 1993 and is a hotel management company that operates restaurants, wedding venues and hotels in 46 locations around the world (25 in Japan and 21 overseas).
In order to inherit the history that has been built up over the past 64 years and to become a hotel that will continue for the next 50 or 100 years, Kumamoto Hotel Castle has taken a new step by entering into a capital and business alliance with Plan Do See in June 2024.
